    I understand what Anthony means. In the Italian restaurant I worked in, the best chef there was from Mexico.

    It’s in no way an insult, I think hes complimenting the skills of Mexican chefs.

    To place the comment in context, you need to watch Tony’s episode of No Reservations where he goes back to cook at Les Halles in NYC. He is talking about restaurant “bistro style” chefs. It’s a classic French brasserie menu, but almost all of the chefs are Mexican or Latinos. No Michelin stars involved.
