Those were invented during the bronze age and were of simple design compared to nowadays. It was basically just a sharp piece two flat metals that was designed in way so that they slide against each other.

Nowadays scissor design has come a long way with so many designs for specific purposes. They accomplish that by changing the angle of the blades, such as off set blades, and changing the fulcrum.
